Below are the top winners, who won their day's round, from the 40 students who participated in the contest. Students were from Mrs. Salipante's two Creative Cooking Classes at LHS.

Each student was given one boneless, skinless chicken breast and was to create a main dish serving for one, including a starch and vegetable or fruit. Students had to come up with their own recipes. Some are original, and some are adjusted from an existing recipe. Some work great; some need some minor adjustments!?! Each recipe is only for one serving as the students had to prepare for the contest.

We would like to give a special thank you to all of the merchants who donated the prizes. Also, we thank the three judges for the final round: Former student, Megan Jansen from Pier W; and Brian Doyle and Tim O'Hara, chefs from Lure in Bratenahl. The owner of Lure, Nick Kustula, graduated from Lakewood in 1990. He also owns Lure Bistro in Willoughby.

"Pollo Relleno with Starfruit and Black Bean Salsa"

FIRST PLACE
Prize: $50 gift certificate to Pier W, Lakewood

Ingredients
1 skinless, boneless chicken breast
2 Tbsp. cornmeal
1 Tbsp. taco seasoning
2 Tbsp. Egg Beaters®
2 whole green chiles
2 2½ in. sticks of Monterey Jack cheese
½ Tbsp. fresh parsley
Dash black pepper and crushed red pepper
Fresh cilantro

Directions
Day One: Wash the chicken and cut off the extra fat. Pound until 1/8 in. thick (Place between 2 pieces of plastic wrap). Remove plastic. In a bowl mix the cornmeal and the taco seasoning. Beat egg slightly in a separate bowl. Slice chile down one side and open insdie the chicken. Place the cheese inside the chile (going along the one side). Sprinkle the black pepper and the crushed pepper on top of the cheese along with the fresh parsley. Roll the chicken (jelly-roll style) starting with the cheese side. Dip the roll into egg, then cover with the taco mix seasoning. Cover. Refrigerate.

Day Two: Heat 1-2 Tbsp. oil in a frying pan. Brown the outside of the chicken. Put the chicken in a pan and bake at 400 degrees for 15 min. Cut and serve.

Starfruit and Black Bean Salsa
Ingredients
¾ cup chopped tomatoes
¼ cup frozen corn kernels
2 scallions
¼ green bell pepper
¼ red bell pepper
1 starfruit
1 4 oz. can of black beans
1 Tbsp. vegetable oil
¼ cup red wine vinegar
To taste: hot pepper sauce, Worcestershire sauce, ground cumin, salt and pepper

Directions
Day One: Mix beans, corn, tomatoes, onions, peppers, oil, and vinegar in a bowl. Season to taste with sauces and spices. Dice half of the starfruit; slice the other half to keep the shape.

Day Two: Place salsa in a serving bowl with sliced starfruit on top. Serve chilled.

On the side:
¼ cup dry rice
Directions: Serve cooked according to the box and serve in a molded shape.
